Ice Cream Bread for real?

I get a newsletter from Macaroni Kids and always look through for interesting stuff.  Well today this is what I found..

This recipe makes one loaf and from what I've read, will work best with high quality, full-fat ice cream.

2 cups of your favorite ice cream, softened
1 1/2 cups self-rising flour

Additional ingredients to mix in (optional):
chocolate chips

Preheat oven to 350.
Spray 8x4 or 9x5 loaf pan, set aside.

In a medium bowl mix softened ice cream and flour together until combined. Mix in any additional ingredients.
Pour into the loaf and smooth out if needed.
Bake for 35-45 minutes or until a toothpick comes out clean.
Remove from loaf pan and allow to cool.
